If you're like me, the last thing you want to do after a long day is slave over a hot stove for an hour making dinner. Consider yourself saved, because I've got several very tasty, very user friendly recipes that take about 20 minutes start to finish, and won't break the bank. An added plus - they can be made vegetarian in a snap.
First of all, you'll need to make sure you have one of those $4.99 rotisserie chickens they sell at any Wal-Mart or Kroger (or not if you're not a fan). Secondly, once you find a recipe or two that sound good, you'll probably need to scan your pantry for the ingredients that you probably already have.
#1 - BBQ Chicken Sandwiches - This recipe is as easy as tossing some shredded chicken in your favorite sauce and loading up a bun.
#2 - Chicken Pizza - This is perfect for picky kids, or kids who like to do it themselves. Everyone can choose their own toppings and there are so many options aside from the given recipe.
#3 - Angel Chicken - Just substitute your shredded rotisserie chicken for the chicken thighs and you're all set. I've made this several times, and I always omit the white wine and it turns out wonderfully. There is always more than enough to go around, too!
#4 - Foil Pack Chicken Fajita Dinner - My husband and I love Mexican food, but it's hard to make at home. This is the perfect way to get that flavor without spending a bunch or working on three or four different dishes. Once again, just substitute the grilled chicken for the rotisserie chicken.
#5 - Chicken Parmesan Pasta - This recipe is a great one for you veggie lovers out there. Just toss some veggies with olive oil, parmesan cheese, broccoli, tomatoes and your rotisserie chicken and you have a meal.
And last but not least, my recipe for Chicken Tortilla Soup:
1 can Campbell's Fiesta Nacho Cheese Soup
1 can green Enchilada Sauce
1 can chili without beans
1 can chopped tomatoes with chiles
1 cup skim milk
1 cup fat free sour cream
2 cups shredded chicken
In a large crock pot, add all wet ingredients until fully incorporated. Add shredded chicken and tomatoes, and let soup heat in crock pot on High for 15 minutes until ready to serve. Garnish with crushed tortilla chips. Serves 6.
