
It’s nearly Mother’s Day, a time to celebrate mom and her magical ways! And after all those years taking care of her precious cherubs, mom deserves a drink! Whether it’s a breakfast, lunch or brunch, a light and delectable warm-weather treat for mom in the earlier hours of the day is a perfect Peach Bellini! Peach Bellinis are not unlike their cousin the Mimosa, which calls for fresh seasonal citrus fruit and sparkling wine. After sampling this fun cocktail at a lovely bridal shower in Maryland, it is clear to me that this is the kind of drink that will have mom bubbling over with joy! This particular mother-of-the-bride who hosted the shower is a huge fan of the Barefoot Contessa, and shared Ina Garten’s easy and luscious recipe!
Ina Garten’s Fresh Peach Bellini

What You Will Need:
2 ripe peaches, which you will have to seed and dice
1 Tablespoon freshly-squeezed Lemon juice (cover your eyes when squeezing!)
1 Teaspoon of sugar (as sweet as mom!)
1 Bottle of Chilled Prosecco on ice (Prosecco is a sparkling white wine from Italy)
Using a food processor, blend the peaches, lemon juice and sugar until the mixture is nice and smooth. Discard any remaining solid peach chunks. Grab a spoon and pour about 1 to 2 tablespoons of mixture into a champagne glass. Fill the glass with cold prosecco. Ta da!
Tell mom “Ecco Qua!” (Here you are!) A refreshing and fun way to toast mom!
