At breakfast time, a smoothie is fast to make or take out of the refrigerator if you’ve prepared it the night before. Or use it as a breakfast drink accompanied by a bowl of raw, whole buckwheat that you soaked overnight in water in a glass jar to soften.

Remember philosopher Santayana's aphorism that those who cannot remember the past are condemned to repeat it? That aphorism rings true when you fill a jar halfway with whole raw buckwheat groats, full the remainder of the jar with filtered water, and soak overnight.

In the morning, you'll taste the softened, chewy buckwheat groats as one of the best versions of a cold cereal. Top with pomegranate or cherry juice and milk or soy, almond, and grain milk.

Rice or oat milk are examples of grain 'milk.' Almond milk has the best taste and fragrant scent when combined with cherry or pomegranate juice over soaked whole raw grains such as buckwheat or whole oat groats. Soak the grain long enough to be chewed easily.

Buckwheat is not actually wheat. Historically, soaked whole raw buckwheat groats have been eaten as a meal since the dawn of agriculture. It's one good way to repeat culinary history.

Pour the smoothie over the soaked raw whole buckwheat groats and eat this raw vegetarian breakfast. You’ll get the health benefits of all the vegetables and fruits in the shake.

For variety, soak the raw buckwheat groats with a handful of sunflower seeds and almonds together in a glass jar overnight in your refrigerator. It sure beats cold cereals in the morning or for a snack from the nutrition point of view.

Ingredients:
1 cup peeled organic baby carrots, rinsed
1 cup dark green kale leaves
½ cup dark red cherries
½ cup red raspberries
½ cup black raspberries/blackberries
¼ cup blueberries
1 cup of pomegranate juice
1 cup cherry juice
2 to 4 stalks of celery
2 tablespoons lecithin granules
¼ cup sesame seeds
¼ cup almonds
2 tablespoons golden flax seeds

Cut the celery in small chunks. Add to a blender such as the Vita-Mix. Set to liquefy. Put the almonds in the blender with the sesame, flax seeds, and lecithin granules. Add the rest of the ingredients, including the liquids. If more liquid is needed add more juice or water. Turn blender on the liquefy speed.

When everything is liquefied, drink the smoothie. It will be the color of milk chocolate tinged with the raspberry tones. If all the ingredients don’t fit in the blender, add juice to half the vegetables and fruits and blend a little at a time until everything is blended smooth. Store the juice in large glass jars in your refrigerator for one or two days.
