A few months ago I made potstickers with home-made dough. They were a big success and tasted great. However, they required a lot of work. Instead, you can use store-bought wonton wrappers: they come pre-made, pre-cut, and all you have to do is come up with a filling.

Here are a few ideas for fillings:

1) mashed potatoes with sauteed onions and mushrooms

2) ground chicken cooked with Indian spices

3) sauteed cabbage with carrots and onions

4) ground beef cooked with Mexican spices

5) ricotta cheese mixed with finely diced vegetables

The cooking technique is the same regardless of the filling:

1) Put a few teaspoons of the filling in the middle of a wonton wrapper. "Paint" the edges of the wrapper with water (I just used my finger) and fold the wrapper over in half. Crimp the edges.

2) Heat oil in a pan. Add potstickers in one layer. Once the bottom of the potstickers is golden brown, very carefully add about 1/4-1/3 cup of water. Cover the pan and cook 3-5 minutes. (You might have to do this step several times depending on the size of your pan and how many potstickers you are making).

3) Serve the potstickers with sour cream and scallions or yogurt or salsa or melted butter depending on the flavor of the filling.

Alternatively, you can steam or fry your potstickers.

Have you ever made potstickers? If so, what filling did you use?
