You have probably ordered gnocchi at an Italian restaurant. Did you like it? Usually it's made ether with potatoes or ricotta. Below, however, is a fake out version of gnocchi I came up with using home-made pasta dough.

Ingredients for "gnocchi"  [serves 4-6]

1/3 cup spinach leaves

1 tablespoon olive oil

1/4 cup water

1 egg

1.5-2 cups flour

1 teaspoon salt

Directions

1) In a food process puree spinach, oil and water.

2) In a bowl whisk an egg, add pureed spinach/oil/water and combine.

3) Add flour and salt and mix until a dough is formed.

4) To form gnocchi, roll out the dough into long sausages, and then cut into 1/2 inch pieces. Cook them in salted boiling water for about 5-10 minutes. [The ridges you see in the gnocchi in the picture below are made by rolling uncooked gnocchi on the fork.]

What to add to these fake gnocchi? Why not use home-made pasta sauce, garbanzo beans and Parmesan? It might look messy, but it's definitely delicious!

I want to hear from you! Please let me know what you'd like to learn: any questions/suggestions would be highly appreciated. Please either leave a comment below or email me directly.
