Easy chicken marinade

Let's say you come home and have limited time to cook dinner. You have a few chicken breasts in the refrigerator and plan on making mashed potatoes. What to do with the chicken breasts? Why not make a super simple and quick marinade and then either grill the chicken on your outdoor grill or simply brown it on both sides in a pan and then finish baking it in the oven?

Marinade

juice of 1/2 lemon

2 tablespoons olive oil

freshly ground black pepper

1 teaspoon ground Dried Tepin Peppers from Marx Foods (they sent me a mixed pack of various dried peppers...I'm still cooking with them!): add more or less depending on your heat tolerance

Mix all ingredients together, add your chicken and marinate for at least 30 minutes in the rerfrigerator.

The nice thing about this marinade is that you can also use it for shrimp or fish.
