Since more of us are staying closer to home this summer, the upside is that we’re spending more time with family and friends. This Fourth of July is the perfect time to celebrate our country’s birthday party along with good company and good food.
To make it more fun, and easier on the hostess, why not bring a potluck dish to share? Here’s a simple salad you can prepare in 30 minutes or less, store in a zippered plastic bag for easy transport, and combine minutes before the call goes out that it's “Time to eat!” Because you can adjust quantities to fit the crowd you’ll be serving, we’re showing these organic ingredients only.
Happy Fourth of July Salad
Fully-cooked organic grassfed ground beef seasoned with
¼ to ½ teaspoon chili powder, salt and pepper
Diced red onion
Sliced celery
Shredded carrot
Torn lettuce (we like Romaine and spinach; include what you like)
Diced avocado
Sliced green onion
Fresh tomatoes, diced, and remove seeds
Shredded cheese
Chopped green bell pepper
Broccoli florets
Salad dressing of choice
Crushed tortilla chips
Prep: While cooking the meat, chop veggies and store them in the plastic bag. [Good idea: Avocadoes darken when cut too far ahead of time. Either toss the cut avocado with a little lemon or lime juice, or wait until you’re ready to serve the salad to cut it.]
Be sure to drain the ground beef, then refrigerate right away in a loosely covered bowl until you’re ready to head to the festivities.
Toss everything with salad dressing. Add the tortilla chips right before serving. Enjoy the celebration!
