How to make your own sour cream substitute

One of the products we’re never without at our house is a 32 oz. container of Cascade Fresh Plain Yogurt.

It’s versatile--for example, use it as a quick, delish, nutritious lunch by spooning 4-6 oz. into a dish, and add organic blueberries (fresh, frozen or dried), and voila! Take it to school or work for lunch; just be sure you have a  place to refrigerate it till the lunch bell rings.

Another way we use the yogurt is as a sour cream substitute. It's a favorite, and ready to use in 35-40 minutes. Here's how easy it is to make:

Into a bowl, place 3/4 cup Cascade Fresh Plain Yogurt. Melt 3 tablespoons of organic butter, and let it cool slightly before gently whisking it into the yogurt. Cover and refrigerate the mixture for half an hour.

If thicker sour cream is more your thing, place a coffee filter into a strainer you've placed into a bowl. Spoon the sour cream substitute into the filter. Cover with plastic and store everything---yogurt, strainer, bowl---in the fridge. Wait for an hour; it'll be ready to use. Toss the liquid you find in the bottom of the bowl.

Now dollop spoonfuls onto whatever you use store-bought sour cream on. Enjoy, knowing this about Cascade Fresh Yogurt. It’s made in small batches--would you believe in the cup you buy it in! It tastes creamy and you’ll probably fall in love with the texture, no matter whether you eat it plain, with blueberries or another fruit, or in the sour cream substitute, and it’s very nutritious. It contains 35% calcium---and eight active enzymes for a high probiotic count.. Free-range cows supply the milk which equals zero rBGH (recombinant bovine growth hormone).
