
A diet that is abundant in plant foods, i.e. vegetables, beans, fruits, and whole-grains, can protect you from the diseases that are common in the U.S.
Take for example heart disease -- a lifestyle-related disease that claimed the lives of more than 860,000 Americans in 2005. Cancer, another lifestyle-related disease, took the lives of more than 550,000 Americans in the same year. Most of these deaths: unnecessary.
Heart disease, cancer, and diabetes - often referred to as the diseases of affluence -- all have a common thread: a diet that is both high in animal foods (beef, chicken, dairy, and eggs) and deficient in quality plant foods. And, it's no coincidence that the two blaring defects in the toxic American diet are the same: too much animal-protein and not enough plant foods.
Do you remember your mom telling you to "eat your vegetables"? Well, she knew what she was talking about. Vegetables are abundant in micronutrients, unavailable in animal foods, that repair the damage that we inflict on our bodies in everyday living.
