
Prevention.com serves up 28 quick meals that fit into their Flat Belly Diet, but really, the meals would be good for anyone who wants to eat healthy.
Each meal features a monounsaturated fat, or MUFA, which includes heart-healthy fats such as avocado, oils, nuts, olives or dark chocolate. And all meals clock in at around 400 calories.
The meal at right is a Greek Lentil Salad. The MUFA used is canola oil, but to make the dish more Mediterranean flavored, I'd swap out olive oil.
Mix 1/2 c canned lentils, rinsed and drained, with 1/4 c each chopped tomato, chopped cucumber, and chopped red onion; 2 Tbsp red wine vinegar; and 1 Tbsp canola oil. Sprinkle with 1/4 c crumbled feta cheese and 2 tsp dried oregano.
