Right out of the oven, baked according to the instructions, these cookies are chewy, with a true cookie mouthfeel. After they cool, they are a bit dryer, since they are not dependent on sugars, wheat, or noxious chemicals to maintain moistness. They are great even then, and also work well as dunkers.
Currently, the company has two flavors, Cocoa-licious and Strawberry-banana Blitz. My low-carbing and discerning husband and teenaged sons have tried them both. In fact, they are so easy to prepare that my youngest son did the baking with both batches. Even though they are both good, the chocolate was the hands-down winner.
Now, as a long-time and committed low-carber, imagine low-carb ice cream between two chewy chocolate cookies. How about a chocolate cookie crust for a low-carb cheesecake? I could go on and on, but drooling is so unattractive. I'd better stop.
Let's just say that David Fulton and Co. have done we low-carbers and diabetics a true favor by giving us a chance to eat cookies again. I thought that that option went out with my formerly 245-pound carcass.
