
As my readers know, I live in Evanston, a somewhat weird but entirely wonderful suburb just north of Chicago. Last year I noticed that Kombucha, that weird but delicious fermented tea that had once been confined to the granola-set, is now trendy:
Our two Whole Foods Markets devote plenty of refrigerated shelf space to kombucha tea drinks, and even the lovely Davis Street train station cafe is selling them to commuters. Lots of people are discovering this delicious, low-calorie, low-carb, sweet/tangy fizzy beverage and are willing to pay quite a bit for it (as much as $4 for a 16 ounce bottle!).
Evanston tea shop, Dream About Tea is now offering its own homemade kombucha by the cup and, eventually, by the quart. While many kombucha teas are made from indifferent bagged black teas, Dream About Tea is experimenting with its own excellent selection of teas, including the sweet and lovely Golden Silk (my favorite), Da Hong Pao, and pu-erh. They are also experimenting with fruit flavors, and made a blueberry/ginger kombucha tea that out of this world.
(Owner Hong Wu spend her childhood in China, where her mother regularly made kombucha for her children. I've tried Hong's kombucha, and can honestly say that it puts the (very tasty) bottled versions to shame.)
Hong will be sharing her secrets for preparing kombucha this coming Saturday, November 7th (11:30am-1:00pm), at Dream About Tea. The cost for the class is $50, and includes the class, a sampling of Dream About Tea's kombucha, and a complete kombucha-making kit so that learners can start making their own kombucha at home.
