Fresh Fish for a Healthy Meal

Need a little inspiration for adding more fish to your family's diet? Here are two fast and delicious summer dinner ideas with fish and shrimp.

These recipes are cost effective, delicious, easy to prepare and versatile. You can exchange pistachios for almonds and halibut for snapper. Whatever you have on hand can work, once you get the main idea.

Mango and Shrimp Salad

Ingredients:

  • Two mangos, diced
  • Two lbs of cooked shrimp, halved
  • 1/4 cup of lemon juice
  • 1/2 cup of lime juice
  • 1/4 cup of Extra Virgin Olive Oil
  • 1 tsp sea salt
  • 1 tsp coarse black pepper
  • 1/2 cup chopped vidalia onion
  • 3 Tblsp chopped cilantro

Mix ingredients in bowl. Leave in refrigerator until ready to serve. Enjoy with green salad and warm crusty bread. Serves 4.

Pistachio Crusted Halibut

Ingredients:

  • 3 Tblsp butter, melted
  • 1 lb of halibut fillets (or your favorite firm white fish)
  • 1/3 cup pistachios, very finely chopped

Directions:

  1. Brush melted butter over halibut.
  2. Spread nuts on flat plate and roll fish in nuts.
  3. Grill (or saute in pan on stove) over medium heat. Turn fish once.
  4. Cook for ten minutes or till firm, but tender. Nuts will brown slightly.

The flavor should knock you out! Serve with steamed asparagus and fresh tomatoes dusted with parmesan cheese. What's so great about this particular dish is that you can use a variety of firm white fish or different nuts to suite your family's taste buds.
