Native to S.E. Asia, mangos are called the King of Fruits. Cultivated in India for thousands of years and unable to be carried by wind or water because of their size, historians believe that traders carried the seeds with them around the world.
Today mangos, distant cousins of pistachios and cashews, are grown successfully in Asia, Mexico, Hawaii, California and Florida. Mangos are one of the most widely consumed fresh fruits in the world.

Mango Cake with Cream Cheese Frosting
Cake Ingredients:

Cake Directions:
1. Combine mango, flour, sugar, baking soda, egg and vanilla extract in the
mixing bowl and beat until smooth. Stir in walnuts.
2. Spoon into greased 9 x 13-inch baking pan.
3. Bake at 350° F for 40 minutes. Cool on wire rack.
Cream Cheese Frosting
Beat 8 oz cream cheese, 1/2 cup butter and 2 tsp vanilla extract in mixing bowl. Add 3/4 cup confectioners' sugar, beating till smooth. Spread over cool cake.
