Single moms don't have a lot of extra time in their schedule. When invited to a potluck, the urge to swing through the pre-made cake & cookie aisle is hard to resist when faced with a long night of cooking.

With this magic recipe, you'll never be subjected to bearing boring bakery food again.

Thai Noodle Salad

This easy-to make dish packs a punch with spicy peanut sauce and cools you off with a refreshing crunch of carrots and cilantro.

Bring this foolproof salad to your next summer barbecue and watch it become the center of attention.

Prep Time: 

  • Noodles: 15 minute cook time
  • Add rest of ingredients: 5 minutes

 Ingredients:

  • 1 box/package - your choice of noodles (angel hair works well, but spaghetti is just fine too)
  • 1 bottle of Thai peanut sauce
  • 1/2 bunch of chopped cilantro
  • 2-3 stalks chopped green onion
  • 1/2 cup shredded carrots (or as much as you want for extra crunch)

Instructions: Cook pasta to your desired tenderness, drain. Run with cold water & drain again. Mix rest of ingredients & serve cold.
