Those of you who know me aren't surprised when I say I could eat sushi everyday. Sushi should be its own food group. Ozumo in Oakland has my name written all over it. Another equally self-indulgent but slightly more sophisticated way to get your sweet fix on Mondays is by heading to Oola where pastry chef Alicia Montalvo - she previously worked her magic at Aqua - is whipping up divine soufflés each week. What's unique about these soufflés is that they are served free standing, with the ramekin they were prepared in removed before arriving at guests' tables. To do this and avoid collapse is a difficult technique that chef Ola Fendert learned while at Remillards, formerly in Larkspur, and has taught to Montalvo.
Montalvo started off last week with a Valrhona chocolate version with warm ice cream sauce. Chocolate will be available for the next two Mondays, with an alternate sauce of white chocolate crème anglais with a Bing cherry and vanilla compote. How does a plateful of fresh, steamed Dungeness crab served with drawn lemon butter sound?
