If the thought of watching group-butcher demos of how to break down a pig, goat, cow, and lamb turn you on, then you must head up to Chase Cellars in Napa tomorrow for Primal, a celebration of the "culinary arts' appreciation for wood fired cooking methods, butchers and whole animal utilization."
The impressive line up of chefs and butchers includes: Chris Cosentino (Incanto, Boccalone), Staffan Terje (Perbacco), Taylor Boetticher (Fatted Calf), Ryan Farr (4505 Meats), and Jeremy Fox (Ubuntu).
Many selections of wine will be poured, including some from Chase Cellars, naturally. Magnolia Brewing Company and Daniel Hyatt of The Alembic will be serving their libations, too.
Tickets are $65 for General admission which includes wines, brews and meat tasting. The VIP experience, complete with reserve wines, mixed drinks, fire roasted oysters, Benton's Bacon Bar, grilled Camembert and Magnolia beer, costs $100.
A portion of the proceeds from this event will benefit the City of Napa Fire Explorers program, a vocational firefighter-training program for Napa County youth.
