Fall is quickly coming to an end in Minnesota. Most of the leaves have fallen off the trees and the cool weather is foreshadowing the brisk winter months to come. I was able to squeeze in one last fall activity before the end of the season: my annual trip to Homestead Apple Orchard in Maple Plain, Minnesota. Fall just wouldn’t be complete without a trip to the apple orchard to pick my own apples off of the trees.

If you are looking for a great, family-run orchard that hasn’t been commercialized or over run with people, Homestead is just the place. On my recent trip to Homestead, I picked a full bag of apples to eat, and to turn into delicious desserts. The first recipe I tried was Apple Crisp, one of my all-time favorite desserts. I love the way the sweet yet tart apples are complemented by the crunchy cinnamon crisp on top. Topping it with a dollop of whipped cream or ice cream is the perfect finishing touch.

Apple-Cranberry Crisp (recipe from Cooking Light)

3 cups cubed Granny Smith apple (about 1 pound)
2 cups fresh cranberries
1/2 cup sugar
Cooking spray
1/3 cup whole wheat flour
1 cup regular oats
1/2 cup packed brown sugar
1/4 cup canola oil

Preheat oven to 350°.

Combine the first 3 ingredients in a medium bowl; spoon into an 8 x 8-inch baking dish coated with cooking spray. Lightly spoon the flour into a dry measuring cup, and level with a knife. Combine flour, oats, sugar, and oil, stirring with a fork until crumbly. Sprinkle over the apple mixture. Bake at 350° for 40 minutes or until bubbly.
