Kid-friendly recipes: Oatmeal Crunch Fiber Cookies - A great choice for Santa's cookies

A great choice of cookies for Santa this year or just to make with the kids for a relatively healthy cookie option that still tastes good - Oatmeal Crunch Fiber Cookies. My daughters and I love making and eating these. Here's the recipe that my family makes.

Ingredients:

  • 1/2 c. veg. oil
  • 1/4 c. softened butter
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 large organic free range egg (they really do taste different in my opinion but you could use a regular large egg)
  • 1 tsp vanilla
  • a few dashes of cinnamon
  • a few dashes of nutmeg
  • 1 c. old fashioned oatmeal
  • 1 c. Nature's Path Organic Flax Pumpkin raisin cereal (crumbled by hand)
  • 1 c. sifted flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 350 degrees.
  2. In mixer on low, mix sugars, oil, butter for about 1 minute.
  3. Add egg, vanilla and mix about 1 minute.
  4. Add dry ingredients in order, leaving mixer on low the entire time and slowly adding everything in.
  5. Let mix a few minutes more on low until well blended.
  6. With a teaspoon, spoon onto cookie sheet into small mounds.
  7. Bake for 8 minutes or so. Times vary by altitude and oven, so be sure to check them.

This recipe makes about 50 small cookies.
