
If you’re anything like me, the last thing you want to do is come home from a busy day and spend an hour preparing supper. But what if you could turn that ‘dreaded kitchen time’ into a fun and memorable experience for your kids? Here are a few recipes that can get you started, so invite your kids into the kitchen and get cookin’:
Sunshine Wraps
6 pieces deli turkey or ham
½ cup shredded mozzarella cheese
½ cup lettuce
Ranch dressing
Tomato-basil or regular tortilla shell
First lay tortilla shell flat then put slices of turkey or chicken and then cheese on top. Cook in microwave until cheese is melted (about 1 minute on high). Add lettuce, and then spread Ranch dressing on top. Roll up your wrap and eat as a quick and healthy lunch.
The Works
1 pound ground beef
1/2 onion, minced
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/8 teaspoon pepper
4 eggs
4 slices American cheese
hamburger buns
In a bowl mix together ground beef, onion, garlic salt, salt, and pepper. Make round, flat patties, fry and drain on paper towel. Fry eggs. Top burger with fried egg, cheese, tomatoes, lettuce and your favorite burger toppings.
Easy Chocolate Waffles
3 cups flour
1/2 tablespoon salt
2 tablespoons baking powder
2/3 cup cocoa powder
2/3 cup sugar
4 eggs
3 1/2 cups milk
1 cup oil
In a large bowl mix together dry ingredients and set aside. Then, in a separate bowl, lightly beat the eggs and add milk and oil. Add mixture to the dry ingredients and stir together a few times.
Pour approximately 1 cup at a time into a waffle iron and cook according to directions. Serve with maple syrup or Cool Whip.
Creamy Chicken Enchiladas
2 cans cream of chicken soup
1 package of sour cream mix
3 chicken breasts, cubed or 1 can of cooked chicken
1 small can of green chilies or 4 fresh green chilies
8 corn tortillas
1 cup shredded cheddar cheese
Mix all the ingredients together (except cheese) in a medium saucepan and cook over medium heat for about 15 minutes, stirring constantly. Next pour the mixture into each tortilla and roll the tortillas. Then place them in a row of a 9X13 inch casserole dish. Pour the remaining mixture over the tortillas. Sprinkle remaining cheese on top.
Bake in oven at 350F degree until cheese on top is melted. Serve with a green salad or guacamole.
Allow your kids to experiment in the kitchen and be imaginative. Sure expect a dirty kitchen after all the cooking is done, but you’ll know it’s all worth it when you see how proud your kids are to help out.
