If you had an interview with one of the companies, you hopefully gathered some information about the position, the job responsibilities and requirements. You asked a few questions to find out what were the important attributes the company is looking for in a candidate and you obtained the business card of the person you met with at the fair.
Now is the time to get off that all important thank you note. Discussions go on all the time about whether to send one off via email or through the mail. The advantage email has is that it is instantaneous.  Once you press send, it gets into the recipients hands as soon as the person checks there email. A hand written note is personal but who knows how long it will take to get from the post office to the mail room to the recipient. If the person is traveling, he may not receive it for weeks. If you really feel strongly about the hand written thank you note, by all means send it. Perhaps also consider sending an electronic version referencing a hand written note is in the mail.
What does one way beyond thank you for your time? This is a perfect time to reiterate your strengths in relation to the position’s responsibilities and requirements. If the interviewer shared what he or she feels are the important attributes in a candidate and you possess those attributes, include these attributes as well.  Given our economic situation, there are more people than ever attending job fairs and applying for positions.  Interviewers and hiring managers are looking for people who stand out above the crowd.
Conclude with your follow up strategy. Let the interviewer know you will be calling in a week (or at the predetermined time frame) and then by all means make the call as promised. Before you pick up the phone, make sure you have a plan addressing the points you want to cover. If you get the individuals voice mail, leave your message. Make sure you again thank the interviewer for their time and consideration. Follow this up with an email; this will put your contact information in their hands and is another reminder of your responsiveness.
The above goes for all interviews not just job fair interviews. While it may not be included in a job interview, companies are looking for responsive individuals. The thank you email and follow up phone calls demonstrate your responsiveness.
