There are 17 Fast & Fresh mixes on Amazon and some have good reviews. According to the Food-Tek website, they are gluten free, nut free, trans-fat free, and enriched with nutrients. Some of the mixes are also dairy free. The mixes come with a measuring cup and container. They are ready to eat after adding water and microwaving for one minute.

Kendall Egan wrote on the Gluten-Free Living blog about the cinnamon coffee cake.

Cooking is an important survival skill for someone with celiac disease. My son’s favorite snack is to “bake” himself a Food-Tek cinnamon coffee cake. It’s a few simple steps…adding water into the mix, pouring the batter into the mold and hitting start on the microwave. The important thing is that a nine year old can do it all by himself and he is very pleased with the warm cake that he makes.”

Food-Tek also makes gluten free Quick-Bake oven ready cookie and biscuit mixes as well as Quick-Bake Kids mixes for use in toy ovens or conventional ovens. They are sold in select stores and can be ordered from Amazon.
