Fiesta slaw, a fresh Mexican slaw recipe featuring jicama and peppers

 This is a fresh Mexican slaw recipe with a difference. I particularly enjoy this as a side dish when grilling. The jicama gives a lot of crunch, and the peppers really add a burst of flavor. I hope you enjoy this slaw as much as we do.

Fiesta Slaw

Makes 10 servings.

Ingredients:
5 Tablespoons fresh lime juice
3 Tablespoons mayonnaise
5 cloves garlic, finely minced
2 teaspoons canned chipotle chilies, rinsed, drained and chopped
1 Tablespoons honey
1 large red bell pepper, cut into thin strips
1 large green bell pepper, cut into thin
1 large yellow bell pepper, cut into thin strips
12 ounces jicama, cut into thin strips
1/3 cup (packed) fresh cilantro leaves, minced
Salt and freshly ground black pepper

Make a dressing by pureeing the lime juice, mayonnaise, garlic, chilies, and honey in a blender or food processor until smooth.

Place peppers, jicama and cilantro in a large bowl.

Add dressing and toss to mix and coat well. Season with salt and pepper to taste.

Cover and refrigerate until just before ready to serve.

Serve at room temperature.
