If you and your peers are "fish-crazy", then  kite fishing in New Zealand  with T.I.M.E. Unlimited may be just the ticket. Participants get to control giant kites which have fishing lines attached to them - think really extreme fly fishing, with the kites ferrying the lines out well beyond the breakers over deeper water which theoretically holds bigger fish. You are not actually up "on" the kite yourself, but on the shore maneuvering the kites, which can travel out about a mile from shore.
