How to make browned butter fruit cobbler

Peach cobbler served with lightly sweetened sour cream. Nice!

Summer is a wonderful time to make a fruit cobbler.  Even if your fruit is slightly underripe, you can still enjoy a great cobbler since baking intensifies the sweetness.  You can also sweeten the fruit as much or as little as necessary to your desired sweetness.  There are many methods of making a cobbler, but this is a particularly easy method--no crust or biscuits to make, just a simple batter.  The addition of the browned butter adds an extra layer of richness and flavor.  For an extremely easy variation, note the second ingredient list at the end of this recipe.

  • 1/2 stick butter
  • 2 1/2 cups fresh fruit (slice larger fruits, and leave smaller ones and/or berries whole)
  • heavy pinch of salt
  • 3/4 cup all purpose flour
  • 1/4 cup fine cornmeal
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • heavy pinch of salt
  • 3/4 tsp baking powder
  • sprinkle or two of ground ginger or other spice
  • 1 cup milk
  • 1 tsp vanilla

Put the half stick of butter in a 1 1/2 quart baking dish and put the dish in the oven at 350F.  Let the butter melt, and then, watching carefully, let the milk solids turn a deep golden brown.  Alternately, you can melt the butter on the stovetop, letting it brown before putting it in the baking dish.

While the butter is melting and browning, cut up your fruit and toss with a pinch of salt.  If the fruit is tart, you might want to toss it with 1/4 cup sugar as well.  This is completely up to you.  At this point, you can also add some spices, such as ground cinnamon, ginger or nutmeg.  This, too, is completely up to you.

Measure out the dry ingredients–flours, sugars, salt, baking powder and spices (if using)–into a bowl. Whisk the dry ingredients together well, getting out any lumps in the brown sugar.

Pour in the milk and vanilla and whisk until you have a smooth batter.  This should only take a few seconds.

Pour the batter into the baking dish right on top of the browned butter.  Do not worry about mixing the butter into the batter.

Spread the fruit in an even layer on top of the batter–it will sink in and the batter will puff around it as it bakes.

Bake until well risen and golden brown and delicious, about 45 minutes.

Serve warm with vanilla ice cream, lightly sweetened whipped cream, crème fraîche or sour cream.

For a simplified version of this cobbler, use these ingredients:

  • 1/2 stick butter
  • 2 1/2 cups fruit
  • 1 cup all purpose flour
  • 1 cup sugar
  • pinch of salt
  • 3/4 tsp baking powder
  • 1 cup milk

Melt the butter in the baking dish at 350F. 

Whisk together dry ingredients, then whisk in the milk.

Pour the batter into the baking dish.

Toss the fruit with a pinch of salt and spread in an even layer on the batter.

Bake for about 45 minutes at 350F, until well risen and golden brown.
