Sinful low carb treat combining the best of two delicious worlds

Vosges bacon chocolate candy bar (credit)

Ebony and ivory, hot and cold, black and white, sweet and sour.  These are opposites that have found a niche by combining them together.  How about this one; bacon and chocolate?  America loves both, why not put them together?  A quick Google search shows me that this is not an original idea; a company called Vosges actually sells such a candy bar, local fairs offer them alongside other chocolate covered treats, and there are even chocolate chip cookies with crumbled bacon chips in them.  It is the classic combination of a sinful treat and a salty protein.  For a low carb dieter, can there be a more indulgent treat?

This is obviously very simple to throw together in your kitchen, but finding a low carb chocolate is going to be the key to keeping you within your daily carb allotment.  Lindt offers an 85% cocoa bar which has only 2 carbs per square with 0.75g fiber for a net of just about 1.25 carbs per square.  Now, don't be fooled; this is bitter, unsweetened chocolate and tastes nothing like a Hershey's bar which is nowhere near 85% cocoa and filled with sugar.  So if you have grown to love the taste of the 85% Lindt bar, then you are good to go as is, otherwise you need to find a combination of sweetener that works for you.  Splenda is not going to work with this application so you will need to look to a few tablespoons of xylitol or erythritol to sweeten up this recipe.

Ingredients:

  • strips of bacon cut into thirds (@ 2 inch pieces)
  • 1 bar of Lindt 85%
  • xylitol or erythritol (optional)
  • sea salt or chopped almonds (optional)

Directions:

Cut bacon into small pieces and cook; allow to cool on paper towel to absorb remaining grease. In a microwave safe glass mixing bowl, crumble candy bar into very small pieces (add xylitol or erythritol if using) and microwave on high for 45-60 seconds.  Chocolate should begin to melt.  Gently stir and redistribute chocolate in bowl.  Microwave again for another 45-60 seconds until chocolate appears almost completely melted.  Stir mixture until smooth.  Submerse cooled bacon strips into chocolate allowing all surfaces to be covered.  Remove and place on wax paper.  Optionally you can sprinkle some sea salt or chopped almonds on the wet chocolate before it sets.  Refrigerate until ready to serve.

This makes very tasty treats that are perfect for satisfying both your craving for chocolate and your craving for bacon.  Low in carbs, this will not derail you dietary progress.
