Lately, as the predictably unpredictable Colorado weather swings from freezing cold days to those practically balmy days when I leave the house in flip flops, I find myself itching to pack up my skis and yearning to break out my summer staples; sun dresses and bikinis. Similarly, I cannot wait to hit up some of my favorite summer bars. Two of my favorite summer bars are, of course, open year-round but it is during those long, hot summer nights that they truly shine.
One of my favorite bars to frequent in the summer is Samba Room, known for their mojitos and Cuban-inspired food. I love going here in the summer before a night out and sipping on a mojito while watching successful thirty-something’s network and flirt. Try the mango mojito for a truly inspired summer cocktail. Samba Room serves theirs with fresh mint, sugar cane, and fresh mango. This cocktail is bubbly, refreshing and just tastes like summer. The mango mojito is reminiscent of a grown-up mixture of sunscreen and Popsicles, the aroma of my childhood summers.
Another summer hotspot is the roof at Sports Column. Check out Sports Column for a post-Rockies’ victory beer or simply lounge in the sun while the enjoying the view of our beautiful mountains. Those of you who just enjoy a cold one on a hot day and sports-crazed Denverites alike will enjoy this rooftop patio. Whether you like sports or not, you can’t help but be excited about living in Colorado when you hang out on the roof at Sports Column.
I will be counting the days until I can enjoy these two bars to their fullest during the hottest months of the year and will have my sun dresses ready for when summer finally heats up Denver.
