The pumpkin is such a wonderful and versatile fruit, and at this time of year we get to enjoy every aspect the pumpkin has to offer. The carved shell used for Jack-O-Lanterns, the meat that makes delicious pumpkin pies, and last but not least, pumpkin seeds. Yes, even the seeds taste great when prepared properly.
My favorite low-fat cooking expert Fiona Haynes has an easy to make, delicious low fat roasted pumpkin seeds recipe. In order to give it some flavor, she uses a little cinnamon, brown sugar and butter-flavored cooking spray. But just enough to add some extra flavor, not excess fat or calories.
Per quarter-cup serving of whole roasted pumpkin seeds:
