Drinkable dessert recipe: Bailey's chocolate espresso maltini recipe

This is a drink that I created two years ago for the Baileys Drinkable Dessert contest.  It is a combination of Haagen Dazs Bailey's flavored ice cream, Baileys Irish Cream, semisweet chocolate and espresso.  Serve this for happy hour on the deck or as the grand finale to your next summer gathering.  This is the ultimate drinkable dessert. 
 
Baileys chocolate espresso maltini

Ingredients:
 
  • 1 1/2 cups Haagen Dazs Bailey's Irish Cream flavored ice cream
  • 2 ounces Bailey's Original Irish cream
  • 1 ounce strong brewed espresso, cooled
  • 1/4 cup chopped semisweet chocolate (may use chocolate chips)
  • whipping cream (can use canned for ease)
  • Chocolate/hot fudge sauce
  • chocolate covered espresso beans
 
Directions:
Blend Baileys ice cream, Baileys Irish Cream, espresso and chocolate in a blender until smooth, pour into a martini glass*.  Top with whipping cream and a few chocolate covered espresso beans.  
 
Cook tip:
Drizzle some of the fudge sauce around the inside of the martini glass prior to pouring.  It looks pretty and adds just a little more delicious chocolate flavor to the drink. I made this recipe for a summer party last year and didn't want to be standing at the blender once my guests arrived.   I blended the drinks ahead of time, poured them into the martini glasses, set them on a tray and placed them in the freezer.  I pulled them out and allowed them to soften prior to serving.  They should be a "drinkable" consistency.  They looked very festive and let my guests know this was no ordinary ice cream treat. 

*I use martini glasses for many types of sundaes and desserts when I am entertaining adults.  This adds some whimsy and elegance to whatever you are serving.  Enjoy!!
