Easter ham on a budget

The traditional Easter ham may seem out of reach in today’s economy. But before you settle for a less expensive whole roasted chicken or turkey, check out this week’s ham specials around town:

Publix:
Semi-boneless ham portion: $1.39 lb.
Cumberland Gap brand whole ham: $1.49 lb.

Winn Dixie:
Half spiral sliced ham: $1.49 lb.

Fresh Market:
Maple glazed spiral cut ham: $2.99 lb.

And when you get that ham safely home and tucked in your refrigerator, treat it to something special with a tangy, sweet bourbon pecan glaze:

Apricot Bourbon Pecan Glaze:

Ingredients:
1 cup pecans, toasted, finely ground
1/2 cup apricot nectar
1/2 cup bourbon
1/2 cup apricot preserves
1 3/4 cups dark brown sugar, packed
1/4 cup molasses
3 tablespoons grainy mustard
1 vanilla bean, split, seeds scraped

Directions:
Heat a skilled on medium heat. Add pecans to the dry pan and toast, tossing frequently to prevent burning. When the pecans have darkened in color and are fragrant, remove from heat and transfer to a plate lined with a paper bag to cool. When cool enough to handle, chop finely.

Boil nectar and bourbon in small saucepan until reduced by half. Add apricot preserves and stir until melted. Combine pecans, sugar, molasses, mustard and vanilla bean seeds in bowl. Add apricot mixture and stir to form thick paste.

Heat ham according to the package directions. 10 – 15 minutes before serving, brush the ham with the apricot bourbon glaze, covering all exposed areas. Continue to brush the ham every 3 – 4 minutes until the ham is ready to serve.
