Firecracker Red Velvet Cake & Cupcakes light up when fresh blueberries are added to the plate! Red cake, white cream cheese frosting and blue berries give these red, white & blue cupcakes and cake a patriotic look!
Table Settings & Serving Suggestions:
Spread the table with a red, white or blue tablecloth. Mix and match napkins, paper plates, plastic cutlery and utensils.
Red geraniums will really set the table off with a splash of color!
Bake cupcakes in red, white & blue decorated cupcake liners.
Ice all the cupcakes with white frosting. Use red and blue Wilton cake colors to color a small amount of the white icing. Using a decorating bag, decorate cupcakes and cake with stars and stripes or swirls of colored frosting. Add colored sprinkles and a sparkler, candle or flag.
Stick a sparkler in each cupcake or around the cake. (Note: Do not light sparklers directly on the cake. They are for decoration only)
Buy little paper flags for the cupcakes from the cake decorating aisle of your favorite craft store.
Serve the red velvet cupcakes or cake on a 4th of July platter.

Red Velvet Cupcakes with Cream Cheese Frosting Recipe
Here's a link for the Red Velvet Cake Recipe that is tried and true, meaning I've made it many, many times, all with yummy successes. Decorate them with the Cream Cheese Frosting that you'll find in the recipe, or try the Buttercream Frosting Recipe below. Either way, you're in for a real treat!
Here's a Buttercream Frosting in case you don't do cream cheese!
Buttercream Frosting Recipe
1/2 cup butter, softened
1/2 cup solid shortening, like Crisco
2 pound bag confectioners' or powdered sugar
1 Tablespoon vanilla extract
1-2 Tablespoons water, if necessary
How To Make Butter Cream Frosting
Using a stand mixer, and fitted with a paddle attachment, or in a medium to large bowl and a hand mixer, beat softened butter and shortening together on medium speed until creamy.
Add confectioners' sugar 1 cup at a time and beat after each addition, scraping the sides of the bowl when necessary. Beat until smooth and fluffy.
Turn mixer to low, add vanilla and beat again, adding water only if needed for proper spreading or piping consistency. Cover bowl with damp towel until ready to use.

Anyone that decorates cakes or cupcakes, loves Wilton.Wilton Enterprises has been in business for a very long time. They just came out with a new 2010 Cake Decorating Yearbook that's full of cool ideas. Here's an article on the new Transformers 2 Optimus Prime cake pan. The cupcake liners, or holders you see in the photo here are silicone. They withstand temperatures up to 400 degrees, and they hold their shape while baking!
