Grape-nut Pudding
I've been making Grapenut Pudding ever since I got married, and that's very long time! At first I thought it was a New England thing, since whenever I went out of the area, no one seemed to know what I was talking about. Mysterious I thought! People always assumed it was made with grapes and/or nuts. It's not, and that's the mystery! The pudding is made much like a custard with eggs, milk, vanilla and sugar. But when Grapenuts are added to the mix, it becomes a whole different dessert.
My version of Grape-nut Pudding is made by soaking the grapenuts in scalded or warm milk for 15 minutes, adding it to the rest of the ingredients, and baking in a water bath. The grape-nuts sink to the bottom, and the silky custard remains on top, resulting in a two-layered dessert. The best way to serve this is with a big dollop of fresh whipped cream. Make this humble Grapenut Pudding more elegant with a drizzle of chocolate ganache over the whipped cream as well.
