Strawberry Cheesecake Parfaits

Strawberry Cheesecake in a glass! Luscious, ripe juicy strawberries, fluffy cream cheese & ricotta filling & Nilla Vanilla Wafers all layered in pretty parfait glasses. Top them off with whipped topping and sliced almonds, and you have a gorgeous dessert for your next brunch!

 

Spring is here, summer is on its way, and with the change of seasons comes strawberries! Fresh-from-the-farm strawberries are always the best, but there's usually a good deal at the supermarket most times of the year. Kid-friendly Strawberry Parfaits are so quick & easy to make, even they can help. If fresh strawberries aren't available, try using blueberries, raspberries or peaches, or a combination of the above to make colorful, mixed-fruit parfaits, or patriotic red, white & blue parfaits!

 

Strawberry Cheesecake Parfait Recipe

  • 4 cups fresh, ripe strawberries, hulled
  • 1/4 cup sugar
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese (4 ounces)
  • 1/4 cup powdered sugar
  • 1 Tbsp water
  • 1 tsp vanilla
  • 1 cup vanilla cookies, coarsely crushed
  • 1/2 cup whipped topping
  • 2 Tbsp sliced almonds


How To Make Strawberry Cheesecake Parfaits

  • Slice 2 cups of strawberries and set aside.
  • Place remaining 2 cups of strawberries and 1/4 cup sugar in a blender and pulse a few times until it resembles coarse puree and sugar is mixed in.
  • In a medium mixing bowl with a hand-held mixer, beat ricotta, cream cheese, powdered sugar, water and vanilla until smooth.
  • Start by layering crushed cookies in the bottom of the glass, followed by strawberry puree, strawberry slices and cheese mixture.
  • Repeat once more and decorate with whipped topping.
  • Sprinkle almond slices over the top.
  • Refrigerate 30 minutes or more before serving.
  • Serves 8 depending on the size of your glasses.
