No time for a ham dinner? Looking for something quick & easy for Easter? Mimosas, Sangria, Quiche, Baked Oatmeal, Spiral Ham, Adult Mac & Cheese, Strawberry Cheesecake Parfaits, Chocolate Covered Strawberries and more!

Easter Brunch, Easter Dinner, Easter Dessert!
Are you scrambling for last minute Easter recipes? Here's some ideas and recipe lists to make your Easter an enjoyable one. Make platters and casseroles ahead. Buy the ham from a specialty market. Have your guests bring a dish to share. Get the kids to help decorate the house and Easter table. Have the guys wash the dishes, or better yet, buy those really nice heavy, decorative paper plates! Put some tulips or daffodils on the table, and dinner is served!

Fruity Wine Sangrias - Drunken fruit and soaked in white wine. Hey, somebody's gotta do it! Don't like white wine? Substitute red wine instead!

Mimosas - The classic Easter Brunch cocktail. Made with fresh-squeezed orange juice and Champagne for a bubbly adult breakfast juice!

Amish Baked Oatmeal - Baked Oatmeal with apples and strawberries can be made the night before and popped into the oven the next morning for a no-fuss breakfast cassserole. You'll have your guests drooling over the smell of cinnamon, spices and maple syrup!

My Top 5 Easter Quiche Recipes - Broccoli, Ham & Cheese Quiche, Chicken & Cheese Quiche, Classic Quiche Lorraine, Spinach, Garlic & Feta Quiche, and finally a Veggie Quiche will satisfy your guests that insist on having their eggs for breakfast...I mean brunch!

Easter Spiral Ham
- Dakin Farms in Vermont smokes the most succulent hams you'll ever eat. Can't get to Vermont for a ham? Your local supermarket or specialty market will most likely have Spiral Hams to purchase. While some cooks will go for the cheap shoulders, I'd rather spend my money on a melt-in-my-mouth Spiral Ham that's already cooked to perfection, AND sliced too! No more big pieces, little pieces, shredded ham with these babies. You'll get a perfect slice every time. And just think how impressed your guests will be when they see that shiny glazed Spiral Ham sitting on the table as its main centerpiece?

Gourmet Macaroni & Cheese - You're going to need a casserole of some sort on your table, so why not Gourmet Mac & Cheese? The kids will love the idea, and the adults will think they've died and gone to heaven when they taste it. What's so special about this recipe? It has sauteed bacon and onions in it, as well as specialty cheeses from your local supermarket. Top it all of with flavored bread crumbs or crushed crackers. Quick & Easy and delicious!

Easter Nests - Easter candy couldn't be any easier than this - two ingredients - chocolate and chow mein noodles make the cutest "nests" to hide candy Easter eggs in.

Chocolate Covered Strawberries
- If you thought the Angel Food Cake & Strawberries idea was quick & easy, then you'll appreciate how fast you can make the most elegant Chocolate Covered Strawberries. And, with little to no effort at all!

Sugar Cookies - Have the kids help you whip up a batch of soft Sugar Cookies. These are the cookies made with cream of tartar so they melt in your mouth! Sprinkle them with pastel colored sugar and bake! You'll soon have a plate full of Easter Sugar Cookies waiting for your brunch guests to arrive!

Angel Food Cake with Strawberries
- You can fuss all day with a homemade Angel Food Cake, or you can buy one from Sam's Club or Costco. I bought a HUGE cake for only $5.49. Add a big box of fresh strawberries, a can of whipped cream, and you're all set!

Strawberry Cheesecake Parfaits - You really want Strawberry Cheesecake, but you got started late and don't have the time to bake one? Make these Strawberry Cheesecake Parfaits. The best of both yummy dessert worlds but a heck of a lot easier! Strawberry Cheesecake in a glass - Now that's classy!
