April Fool's! It's Strawberry Fool Parfaits!

April Fools! This is perhaps one of the easiest dessert recipes of them all! Just three ingredients - strawberries, whipped cream and sugar - and you've got an elegant strawberry dessert to serve to company tonight!

I'm not sure where the name for this recipe came from, but it must have something to do with the ease of preparation! Our guests are fooled into
thinking we spent hours on this beautifully delicious Strawberry Fool dessert!

You can use a variety of berries to accommodate the season's bounty. Blueberry Fool, Raspberry Fool and even Peach Fool will dazzle your company each time you make it. Take it up a notch by topping the Strawberry Fool with a chocolate covered strawberry! Simply Delish!

 

Strawberry Fool Recipe

  • 3 cups washed, hulled and sliced strawberries, or 1 pound bag unsweetened frozen, strawberries, thawed out
  • 1 Tablespoon Cointreau, or other orange flavored liqueur (optional)
  • 1/2 cup white sugar
  • 1 cup heavy whipping cream


How To Make Strawberry Fool

  • If using fresh strawberries, hull and slice and place in bowl. Add optional orange liqueur, sugar and set aside in the fridge for a few hours.
  • If using thawed frozen strawberries, place in blender, and whir on high until pureed. Refrigerate for a few hours.
  • Just before assembling the Strawberry Fool, whip heavy cream on high with an electric mixer until you have stiff peaks.
  • Fold the strawberry puree into the whipped cream very carefully.
  • Spoon the Strawberry Fool into pretty parfait glasses, swirling at the top. Refrigerate until ready to serve.
  • Decorate with a large chocolate covered strawberry, extra whipped cream and a sprig of mint, or drizzle with chocolate ganache.
  • Make 4 servings. Refrigerate any leftovers. Best eaten the same day.
