Best Blueberry Muffins

 

Make bakery style blueberry muffins at home! The best muffins are made with fresh blueberries, King Arthur Flour and real butter. Kid-friendly muffins are easy to make, take no special talent or equipment other than muffin pans, and can be made ahead and frozen for later!

 

How to Make the Best Muffins

  • Blueberries: Fresh Blueberries are obviously the best when you can get them. If not, the frozen wild Maine blueberries are the next best choice. And here's an added benefit - Both fresh and frozen blueberries are full of antioxidents!
  • Mixing: Do not over mix the batter. This will make the muffins tough and they will not rise properly. Fold in the flour with a spoon or spatula just enough to make sure all ingredients are moistened.
  • Muffin pans: Texas size, regular size or mini muffin pans. Non-stick pans like Baker's Secret are easy to use, or use muffin papers for easy cleanup.
  • Baking: All ovens were not created equal. Baking time may vary from oven to oven. Always preheat. Resist opening the oven for the first 15 minutes of baking, at which time you should turn the pans around as hot spots and burned muffins do happen.
  • Freezing: Airtight container, layered between wax paper or paper towel.


Blueberry Muffin Recipe

  • 1/2 cup butter (1 stick)
  • 2 large eggs
  • 1 cup milk
  • 1/2 tsp vanilla
  • 4 tsp baking powder
  • 1/8 tsp salt
  • 1 cup sugar
  • 3 cups King Arthur unbleached white flour
  • 3 cups blueberries, fresh or frozen
  • 1/4 cup sugar for sprinkling on top, optional

 

How To Make Blueberry Muffins

  • Preheat oven to 350 degrees.
  • Spray muffin pans with vegetable spray, or use muffin papers.
  • Melt butter in a microwavable cup or bowl. Set aside.
  • In a large stainless bowl, whisk together eggs, milk, vanilla, baking powder, salt, and sugar. Whip together well.
  • Add butter and whisk again until all ingredients are well blended.
  • Fold flour into the mixture with a spatula or wooden spoon just until moistened.
  • Gently fold the blueberries in, taking care not to over mix the batter.
  • Using a cookie scoop, fill muffin cups 3/4 full.
  • Sprinkle a little sugar on the top of each muffin.
  • If you want to make streusel muffins, sprinkle that on now, omitting the sugar.
  • Bake at 350 degrees for about 25 minutes, or until lightly browned and muffin springs back when touched.
  • Wait 5 minutes, then carefully release muffins and let cool on a wire rack.
  • Makes 15-18 regular size muffins.

 

Make Blueberry Streuesel Muffins: Mix ingredients together and sprinkle on top of muffins before baking.

  • 1/3 cup brown sugar
  • 1/3 cup flour
  • 2 Tbsp butter
  • 1/2 tsp cinnamon
