Honey is overrated: Embrace real maple syrup

Maple syrup gets a bad wrap. Most pancake lovers are smothering their flapjacks with a thick and artificially sweet imitation of maple syrup.

Because of the high-fructose trend of food culture, the bee vomit--er, honey industry is getting a large share of the market for natural sweeteners.  What ever happened to good old maple syrup and who even produces it anymore?

A little company representing the Coombs Family's long tradition of creating delicious products only from real maple syrup had me try their maple syrup and candy.  Since then, I've been using it for tea, pancakes, and even baking.

Real maple syrup is sticky, but not as viscous as we traditionally think.  This impression is likely influenced by the corn syrup in almost all pancake syrups.  Real maple syrup also has a unique taste which may surprise you.  Its natural and soft flavor are truly distinct without being oversweet.

I was also surprised to learn candy could be made from maple syrup!  I received a little windowed box containing a delicate but deliicous maple man made from nothing but maple syrup.
