
As a huge fan of Campari I couldn't not be more delighted to see Aperol, its bitter yet slightly sweeter sibling introduced stateside. It adds balance to many drinks and should be used sparingly. It's particularly delicious when mixed with a flute of sparkling wine, and gives the drink a beautiful color.
A an equal mix of Aperol and tonic on the rocks is perfect delicious as an aperitif or even an after-dinner drink if you want to go light on the alcohol. It's only 11 percent alcohol so it makes for a less boozy drink.
One classic use of it is in my take on an Aperol Spritz:
1 ounce Aperol
2 ounces Prosecco or sparkling wine
A splash of seltzer or mineral water
2 dashes of bitters
1 orange twist (without the pith)
Pour the Aperol and Prosecco into a flute, top with seltzer and garnish with the orange twist.
