When roasting pumpkin seeds, be sure to keep them in a single layer
P. Allen Smith

You took the time to save your pumpkin seeds, and you will be rewarded. Roasting pumpkin seeds isn't difficult.  You may also roast your squash seeds the same way with the great  results.

  • Clean pumpkin seeds
  • Soak clean seeds in salt water for 6-8 hours, overnight is fine too
  • Drain the seeds and dry them between towels
  • Coat baking sheet with cooking spray
  • Layer seeds in a single layer on baking pan with sides
  • You may add a extra seasoning here favorite -some like hot sauce, or garlic, or Cajun seasoning (kids tend to like them plain).
  • Roast at 350 degrees. Stir often. Cooking time will vary with the moisture content of the seeds, but 20 to 40 minutes is common. Stay with your seeds during the cooking time.  Do not leave them unattended.
  • Let them cool
  • The outer hull will easily break off
  • Eat the tasty treat!

If you or your some one in your family will be carving a Jack-o-lantern for Halloween, Allen Smith recommends saving the pumpkin seeds you find inside. He has an easy recipe for roasting the seeds to make a good tasting snack.
