In advance of its 10-year anniversary, BIN 36 has rolled out a whole new, all-American cheese menu. Obviously we're not talking about the bland, individually plastic-wrapped slices you find at the grocery store, these are 45 artisan cheeses from producers around the US, including two from Illinois' own Prairie Fruits Farm.

To celebrate both the new menu and the upcoming anniversary in December, BIN 36 is offering $3 cheese flights through the end of October. Check out the list below for more information about the cheeses featured in the $3 flight, as well as suggested wine pairings:

  • Chef's Chevre, goat's milk cheese, Laura Chennel Chevre, Sonoma, CALIFORNIA
    One of America's first artisanal cheese producers and still going strong.

    Wines it pairs well with:

    2007 (Chenin Blanc) Vouvray, Demi-sec, Yves Breussin, Loire Valley, France
    Loaded and rich with pockets full of floral and honey scented ripe citrus, apricots and golden apples.
    2006 Pinot Noir, BIN 36, Monterey, CA
    Silky smooth with a gorgeous texture, elegantly enticing rose petals, red currants, black tea and earthy cherries.
     
  • Prairie Breeze, cow's milk cheese, Milton Creamery, Milton, IOWA
    Crunchy crystals and a lemony mustard finish make this a special cow's milk cheese.

    Wines it pairs well with:

    2006 Pinot Noir, BIN 36, Monterey, CA
    Silky smooth with a gorgeous texture, elegantly enticing rose petals, red currants, black tea and earthy cherries.
    2007 Zinfandel, Grayson, California
    Here's a Zin with everything you'd want: ripe, dark fruit, generous texture and perfectly integrated black pepper and spice.
     
  • Maytag Blue, cow's milk cheese, Maytag Dairy Farm, Newton, IOWA
    A great starter blue. Well balanced, chewy and lemony with hints of salt.

    Wines it pairs well with:

    2007 Zinfandel, Grayson, California
    Here's a Zin with everything you'd want: ripe, dark fruit, generous texture and perfectly integrated black pepper and spice.

BIN 36 is located at 339 N. Dearborn (at Marina City)
The Cheese Bar is open Mon-Wed. from 2pm-11pm, Thurs. from 2pm-midnight, Fri. from 2pm-1am, Sat. from noon-1am, and Sun. from 2pm-10pm.
