This creamy peanut butter Easter egg recipe is a holiday twist on the classic Buckeyes candy recipe. Hand dipping the eggs gives them a homestyle touch, but there is still plenty of time to order an Easter egg mold if you prefer a polished finish.
Peanut Butter Easter Egg Recipe

Combine butter, peanut butter and vanilla in mixing bowl. Stir until the butter is completely blended. Add about half the powdered sugar and stir. Add remaining sugar and stir. Once the dough becomes too difficult to stir, knead it by hand.

Divide the dough into ten equal pieces. Form eggs by mounding the dough in the palm of your hand. Cover and chill in the refrigerator for at least two hours.
Line a large baking sheet or tray with wax paper. Melt chocolate coating according to package directions. Working with one candy egg at a time, drop the chilled egg into melted chocolate coating. Scoop on a fork and let excess chocolate drip away. Place on the tray. Repeat for remaining eggs.
Peanut Butter Easter Egg Recipe Tips
If it is difficult to shape the dough, chill it is firm enough to hold its shape.
The amount of dipping chocolate required depends on the thickness of the coating. Begin by melting half of the chocolate and use remaining coating as needed.
The peanut butter eggs must be cold, not frozen, to hold up to the dipping process.
If chocolate pools around the egg, score it with a toothpick. The excess will snap off once the peanut butter egg sets.
Decorate eggs by covering with sprinkles or nonpareils after placing on tray. (Work quickly before the chocolate coating sets.) Drizzling with melted chocolate coating is another easy decorating method.
