Load up on summer squash, zucchini, and eggplants while they are still being sold, as the farmer’s markets are about to close. In fact, yesterday was the last Wednesday market day in Cherry Creek.

Here’s an easy and healthy way to grill up your produce deals:

  • Slice the vegetables into long thin vertical strips.
  • Preheat your grill to medium high and brush the produce with olive oil and sprinkle with sea salt.
  • Wrap in aluminum foil (for steamed effect) or grill on the open flame for a seared effect. You can also bake the vegetables covered in a casserole pan with foil at 400 degrees until tender.
  • Here are a few other optional spices to add with the salt for different flavors:
    Indian flavor: Vindaloo
    Cajun: Old Bay Seasoning
    Smoky: Alderwood smoked salt
    Sweet: Cinnamon and paprika
    Herbal: Basil and oregano

Any which way you choose to season your squash, you will be filling your body with fiber, vitamins and minerals including: potassium, magnesium, calcium, and vitamin A.
