Here's a fun recipe for anyone out there on a weight loss journey who wants to feel like they're having a cheat meal without having to stray too far off their program. These pancakes are high in protein, low in carbs, and taste as close to the real thing as you can get. For reasons of taste and consistency, I use Beverly International's Ultimate Muscle Protein, but you can use other protein powders if you wish. However, you may have to add more or less water to get the proper consistency when using other powders.
Combine the following in a large mixing bowl:
1 egg
2 scoops of Beverly’s Vanilla Ultimate Muscle Protein
1/4 cup of oatmeal (chopped or ground)
3/4 tsp of baking powder
1/3 cup of water
You can also add blueberries or chopped strawberries if you wish. Mix with a wire whisk until you have a pancake batter consistency. Then, using a non-stick pan on a medium heat, cook each pancake to your desired darkness.
