Millet is a source of nutrition that is sadly untapped in this country yet it is versatile and extremely nutritious. The following recipe will feed a family and then some.
Cook the millet as you would rice except per each cup millet you use three cups of water. Or put it in your rice cooker. For stove top cooking, put the millet in three cups cold water and bring it to a boil, then cover it and turn it down to medium low for about twenty minutes. When it is done add the rest of the ingredients and stir, turn to the lowest setting for about five minutes then serve. If it is too thick add a bit of water.
This recipe can be warmed up the next day with a bit of water in a sauce pan and tastes just as yummy if not better if you don't eat it all the first day. Remember this recipe is family size.
