Meli's Tres Leches Cake - With Irish Cream Liqueur

Tres Leches Cake - Wikipedia photo

Tres leches cake is absolutely hands down an all time favorite, and for those of you who don't know, tres leches means three milks in spanish. 

The recipe for it came from my friend Meli, this is an authentic Mexican recipe.

Ingredients:

  • 6 juevos claras (6 eggs separated) 
  • 2 tazas de azucar (2 C. sugar)
  • 2 tazas de harina (2 C. flour)
  • 1 taza de leche ( 1 C. whole milk)
  • 3 cucharaditas de polvo ornear (3 tsp. baking powder)
  • 1 cucharadita de vainilla (1 tsp. vanilla)
  • 1 taza de leche condensada (1 C. sweetened condensed milk)
  • 1 taza de leche evaporada ( 1 C. evaporated milk)
  • 1 taza de media crema (1 C. half and half)
  • 1/2 taza de crema de licor (Irish)  (1/2 c. Irish Cream Liqueur (Use my mock Bailey's Irish Cream Liqueur recipe by clicking on the link below.)

Beat egg white till stiff peaks form then add the 2 C. sugar a little at a time.  Afterward add the egg yolks one at a time.  Mix the baking powder into the flour and fold into the egg/sugar mixture with the 1 C. whole milk and vanilla.  Pour your batter into a greased and floured cake pan and bake at 350 degrees for 40-45 minutes.  Test with toothpick.  Let cool and then carefully poke the surface with a fork.  In the meantime, mix the 1 C. of sweetened condensed milk, 1 C. evaporated milk, 1 C. half and half, together with 1/2 C. of Bailey's Irish Cream in the blender.  Then pour on top of the cake.  Let it rest, soaking up the three milks and the Bailey's.  You can frost it with whipped topping or make your own whipped topping by whipping 1 pint of heavy cream with 3 Tbsp. of sugar until thick, then spread on top of your tres leches cake.  Decorate the top with maraschino cherries or peeled and sliced kiwi fruit and strawberries.  This cake should not be left out, refrigerate any unused portions (If there is any).
