
Now that the harvest is in and you have either grown your own butternut squash or bought them, what do you do with a butternut squash besides bake it and put brown sugar and cinnamon on it?
Here is a recipe you will want to make again and again. Twice baked potatoes:
Cut a medium sized butternut in half and bake in the oven for about and hour with 4 potatoes till done.
Cut the potatoes lengthwise and carefully scoop out the potato, saving the skins, and mash in a bowl. Scoop out the squash and mash with the potato. Add a bit of milk and butter and season with Spike to taste. Put the potato and squash mixture back in the potato skins and pop them back into the oven on a greased cookie sheet and bake again for about 15 minutes or until the tops of the potato mixture start to turn golden in color. Serves 8.
This is a delicious way to use your butternut squash and the same idea can be applied to mashed potatoes if you don't want to mess around with the potato skins. Not only is it delicious, but it adds more nutrition to your potatoes.
