Breakfast really is the most important meal of the day and it doesn’t have to be boring, I swear.

There is a great store in Grafton, WI near where I’m from that is a gluten free store that bakes all their own goodies called Slow Pokes. They put out this weekly newsletter showcasing the most neglected meal of all, breakfast.

I’m still working on finding the San Francisco version of Slow Pokes, but here is some really useful information to keep in mind.

Why is it so important to eat breakfast? Well, first, it re-hydrates your body, replaces trace minerals, alkalizes your blood, gently wakes up your metabolism and moves digestive system waste while helping you hold on to nutrients.

For all of you gluten free eaters, you need to get your hands on
Gluten-Free For Dummies by Danna Korn and Connie Sarros, it will make your life so much easier.

In the book they discuss the importance of breaking the fast: “If you eat at 6 pm and wake up at 7am, you’ll have fasted for more than 13 hours by the time you sit down for breakfast. At that point, your body’s blood sugar levels are screaming for nourishment. If you are weight conscious, eating breakfast jump-starts your metabolism so it works harder and more efficiently all day. Simply put, never miss breakfast.”

Most buys days I have a skim latte and yogurt and fruit and either a rice cake with peanut butter and raisins or oatmeal. But after learning about these awesome gluten free pancakes, I naturally had to indulge.

Before you begin, make sure your pantry is stocked.

Coconut Milk Pankcakes/Waffles


8 eggs
½ cup coconut milk, melted
2 tsp. vanilla extract
1 1/3 cup coconut milk, buttermilk, kefir, cow’s or goat’s milk, or non-dairy milk
1 tbs. Stevia powder
¾ cut coconut flower, sifted
½ tsp baking powder

Blend Together eggs, oil, vanilla, coconut milk, Stevia and salt. Combine coconut flour with baking powder and thoroughly mix into batter. Heat 1 tbs. coconut oil in skillet. Spoon batter onto hot skillet making pancakes about 2-3 inches in diameter.

Makes about 1 dozen pancakes.
