Ah, the sizzle of the summer barbecue and just like that, woe to our long, cold Chicago winters. With those cold winters comes time to put your built-in kitchen into hibernation mode.

Although many homeowners continue to use their outdoor grills all winter long, late fall is a great time to perform yearly maintenance on the whole kitchen.

I recommend the following:

Thoroughly clean the inside grills, removing all grease buildup
Use a stainless steal polish to clean and protect the outside surfaces
Drain all plumbing lines in outdoor sinks, ice makers and tappers
Tappers should also be emptied
Granite countertops should be sealed twice a year using a granite cleaner
Note: it is important to use only products that are recommended for granite. These cleaners have a neutral pH, which avoids etching or scratching the granite countertop.
Turn off outdoor refrigerators
Covers are optional, but will provide added protection and cleanliness for the outdoor kitchen

Russ Fault at Kalamazoo Outdoor Gourmet warns us not to cover outdoor refrigerators because the lack of airflow creates an environment conducive to condensation.

The outdoor grill can be used all winter and will be a very rewarding way to savor the smells and tastes of summer past.
