The closer we get to the holidays, the tighter our budgets and time is going to get.  Now is the when we need to dig in our freezer and pull out those items we bought on sale.  We knew we would use them one day.  Use imagination.  Make up a whole new recipe.  Sometimes this is a good thing, sometimes not so much, but try anyway.  We might amaze ourselves and our family.

A piece of meat, cream of something soup, instant rice or cooked pasta, bake and you have a meal.  Maybe add a little cheese on top and heat a canned vegetable to complete.  Throw the roast or other type of meat hiding in the bottom of the freezer in a lightly oiled crock pot.  Add mixed vegetables, broth and season to taste.  Let it cook all day and your house will smell wonderful when you get home.  Fix bread, rice or potatoes to go on the side and you have a Sunday dinner during the week.

Using leftover meats from the week can be a good idea as well.  A recipe I have created for my family is:

Chicken Cordon Bleu casserole

  • 1 and a half to cups cubed cooked chicken
  • 1 cup cubed cooked ham
  • 1 can cream of mushroom soup
  • 2 cans water
  • 1 and a half cups instant rice
  • 1 cup shredded cheese (your choice)

Mix all ingredients except cheese.  Place in a greased baking dish.  Cover with the cheese and bake at 350 degrees for about 30 minutes or until hot and bubbly.  Since everything is pre-cooked, you have a meal ready in no time.

Be creative and use everything.  Be sure to share your ideas with others.  We are all in need of good recipes.
