The smell of new oak and fresh made food greets you as you stroll into the Rackhouse Pub for the first time. Tiers of whiskey barrels decorate the walls and are wrapped around the structural columns of the restaurant; giving the illusion that the whole place is held up by the new American white oak barrels. It's a nice, warm, and inviting place to spend an evening away from the autumn chill. A long line of taps feature an all-Colorado craft beer repertoire and the featured Stranahan's Colorado Whiskey is distilled a mere 200 feet behind the bar. Stranahan's rents out the Rackhouse Pub to its current proprietors.
Stranahan's Colorado Whiskey has an interesting history as one of the few micro-distilleries in the nation. Jess Graber, a volunteer firefighter was called to a fire at a barn who was owned by renowned liquor connoisseur George Stranahan. As the flames were dying down, they got to talking about their big passion in life - whiskey. One thing led to another and Stranahan's Colorado Whiskey was born. The whiskey itself is made from 100% malted barley, unlike bourbon which by definition has to be made from at least 51% corn. The mash is then distilled using a custom-made pot and column still. The distillers call their whiskey the first and only Rocky Mountain Straight whiskey style in the country - a sort of blend of scotch and bourbon distilling and aging techniques. The whitedog whiskey is aged in new American White Oak barrels between 3 and 6 years before being bottled. The initial process to make whiskey is identical to brewing a great craft beer and they pay homage to the craft beer inspiration at their new pub.
